n December 2, 2016, SingleThread opened its doors in Healdsburg, CA. Praise quickly poured in for the owners’ careful attention to detail and warm and welcoming service. Within a few months of opening, SingleThread received a four-star review from the San Francisco Chronicle. Shortly after, the restaurant was honored with two Michelin stars. The 3-in-1 restaurant, farm and inn has been shaking things up in the culinary world ever since, and was recently deemed the Miele One To Watch, in the wake of The World’s 50 Best Restaurants 2018.
Created by husband and wife duo, Kyle and Katina Connaughton, the couple prioritize hospitality and comfort in all things, taking after the Japanese concept of omotenashi. The Connaughtons want you to feel like a guest in their home, and to that end every meal and room has its own personal touch. From the customizable menu (which includes dietary restrictions, too) to the elegant yet contemporary guest rooms, SingleThread offers the very best to visitors in Sonoma Wine Country.
The Dynamic Duo & Their One-Of-A-Kind Venue
Homegrown takes on a new meaning at SingleThread. Katina, Farmer and Floral Designer at SingleThread, spent years studying horticulture and sustainable agriculture, as well as culinary and farming techniques. Although Katina hails from California, she has studied all over the world, including UK and Japan. Back in her element in Healdsburg, Katina heads the team of farmers, growers and foragers. Together the team manages the vineyards, greenhouse, chicken coops, heirloom fruit orchard, bee hives and a cattle paddock that make the food at the restaurant truly farm-to-table.
While the farm supports the restaurant in many areas, Katina prefers to focus on growing produce that is not readily available in the region. This includes lily bulbs and ginger, which are ingredients that are commonly used in Japanese cuisine. SingleThread also recognizes the value of forging relationships within their community. The selection of goods at SingleThread would not be complete without the support of local artisan shops and craftsman.
Chef Kyle takes over in the kitchen, preparing beautifully balanced courses. Kyle too, has years of experience in the culinary world. After his studies at The Southern California School of Culinary Arts, he refined his skills in top-notch Los Angeles kitchens. In 2003, Kyle was blessed with the opportunity to study under Chef Michel Bras at his three-star Michelin restaurant in Japan. In addition to his time in Japan, Kyle went on to create the Fat Duck Kitchen in England. Today, Kyle brings knowledge in the business to SingleThread, where Japanese cuisine is prepared with a twist, lending itself to Sonoma County.
The dining experience at SingleThread is remarkable. It’s an eleven-course meal, which means two things: pace yourself (although portions are well balanced) and prepare to be there for at least three hours. The dinner begins with appetizers on the rooftop, decorated with floral arrangements and greenery. Following the first course, move into the custom dinning room. Artfully designed, woven screens and decorative tiles bear meaning and aesthetic appeal, eluding to Japanese culture. It is also particularly hi-tech, including a lighting system that changes 7 times a day, according to the daylight and time of year.
After your dinner and wine, it may be hard to part ways with such a magical place. Fortunately for you, you don’t have to.
