inter may be the most hectic season when it comes to family and out-of-town guests. Between sleeping arrangements and maintaining a festive home, preparing a meal (albeit an impressive one) is a responsibility you wish would manifest itself. Menu planning, grocery shopping, mise en place, actual cooking and then dishes are exhausting to contemplate, much less execute. While you can get away with a continental breakfast and make reservations for dinner, lunch is more challenging to navigate. Satiating visitors in the middle of the day is a task often delayed until you resort to calling for take-out. Established in 2014, Hautè Productions is a boutique catering and event planning group. A rare find situated within a commercial area of Laguna Hills, they originated as a pop-up dinner concept, hosting multiple soirees each quarter. Ultimately, they would evolve into a specialized catering business.

A traditional catering business has customers browsing a portfolio of pre-planned menus to select from. Prante’s approach was to provide his prospective clients a menu without boundaries, “I like to know what the theme is so that I can sculpt the menu around their vision. I like to help my clients turn their visions into a reality. All menus are custom; I try to bring the culinary artistry into the catering industry.” His versatility stems from experience throughout Orange County, Los Angeles and Las Vegas. Most notably, he’s trained under influences such as Top Chef Amar Santana, Michael Mina, Thomas Keller and Wolfgang Puck.



Since you’re hosting the middle of the day, the flexibility to make plans more or less elaborate is entirely up to you. Is it a balmy afternoon? Have a BBQ spread in your backyard. Are there young palates present? An interactive taco bar could be enjoyable for less complex tastes, allowing them to pick and create using their favorite ingredients.
