Recreate This Lobster Mac and Cheese From Shuck Oyster Bar

Executive Chef Mina Sacramento of Shuck Oyster Bar shares with us her decadent Lobster Mac & Cheese recipe. We dare you to try and take just one bite. You might need to make a double batch of this recipe because everyone at the dinner table will be wanting a second helping — it just tastes so good!

Ingredients

  • 1 1/2 c Lobster Meat, chopped
  • 3 cup Mornay
  • 2 tbsp. Butter
  • 1 tbsp. Garlic
  • 3 cup Cavatappi, cooked

Method

  1. Add butter to a saute pan, once melted add garlic and lobster
  2. Once lobster is almost fully cooked add the Mornay
  3. Add cavatappi once cheese sauce is heated through
  4. Season with salt and pepper
  5. For added cheesy goodness add shredded cheddar

Shuck Oyster Bar

To Make the Mornay sauce

Yields 2 Quarts

Ingredients

  • 1/2 lb Butter
  • 1 Yellow Onion, cut in quarters
  • 1 tsp. Peppercorns, whole
  • 3 Bay Leaves
  • 1 sprig Thyme
  • 4 Whole garlic cloves
  • 1 qt. Milk
  • 6 oz Shredded Parmesan
  • 6 oz Shredded Mild cheddar

Method

  1. Melt butter and then add onions until translucent
  2. Add peppercorns, bay leaves, thyme and garlic, and cloves, stir for one minute
  3. Add milk and stir until milk simmers
  4. Strain and place liquid into another pot, dispose of onions and aromatics
  5. Make sure liquid is hot, but not boiling
  6. Add in cheese until melted
  7. Season with salt and pepper as needed
