Charred Eggplant Hummus by Chef Joel Harrington

You’ll Need:


  • 5 Lb Eggplant
  • 1 Tbs Smoked Paprika
  • 1/4 Cup Tahini
  • 1 Pint Roasted Garlic
  • 1 Quart Garbanzo Beans
  • 1 Cup Lemon Juice
  • 3 Tbs Urfa Pepper
  • 1 Pint EVOO
  • Salt to taste

Green Garbanzo Garnish

  • 1 Pint Green Garbanzo Beans
  • 2 Tbs EVOO
  • 1 TSP Espalette pepper
  • Salt


  • Quarter lemon, charred
  • Chopped Parsley
  • Diced Scallion
  • Lavash Crackers


Cut eggplant in half and roast in the oven with a spice blend of Olive oil, urfa pepper, smoked paprika and salt. Next, combine all hummus ingredients in a food processor and blend hummus until smooth, one to two minutes.

Build your hummus dish by plating the hummus, topped with Green Garbanzo Garnish. Then finish the plate with the rest of your garnish ingredients and enjoy.
