Golden Beet Salad With Three-Citrus Dressing

Serves 4 Beet

You’ll Need:

  • 1 tsp Fresh Orange Juice
  • 1 tsp Fresh Lemon Juice
  • 1 tsp Fresh Lime Juice
  • ½ tsp Honey
  • 1 tbs Grapeseed Oil
  • 1 pack Melissa’s Steamed Golden Beets, drained
  • 3 tbs Crumbled Queso Fresco
  • 1 tbs Pomegranate Arils
  • 3 Basil Leaves, finely shredded

Directions Beet

  1. In a medium bowl, whisk together the citrus juices and honey. 2. Slowly whisk in the grapeseed oil; season with salt and pepper to taste. 3. Add the beets, cheese, pomegranate arils and basil leaves to the bowl. 4. Toss to combine.
