Meet Executive Chef Craig Brady of Haven Gastropub

or locals and visitors of the Orange circle alike, Haven Gastropub is both well known and well loved. Since its opening in 2009, Haven has played a standout role in shaping the culinary landscape within Orange County, its location in the heart of Old Towne Orange making it a hotspot for those who frequent the historic city center.

Whether you’re stopping in for a quick bite or frequenting their famous wine Wednesdays, Haven has become a notable spot for its extensive drink menu and culinary originals. Newly appointed Executive Chef Craig Brady is doing his part to keep Haven at the top tier of Orange County restaurants. Chef Brady, who served as Chef de Cuisine at the gastropub from 2012 to 2016, knows a thing or two about keeping it fresh. Having spent the past two years working with Chef Michael Rossi at THE RANCH Restaurant, Chef Brady brings a unique perspective and taste to the menu at Haven.  

Haven recognizes the importance of well-executed comfort food, offering a menu of decadent classics prepared with a creative twist. With options perfect for both sharing and hogging, Haven boasts an impressive array of mouthwatering dishes. In the realm of appetizers lays the impeccably rich yet elegantly balanced Chicken liver toast, topped with Harry’s Berries strawberries, pickled mustard seed and port syrup. For a classic comfort to share, the veal and pork meatballs don’t hold skimp on flavor, blanketed by layers of tomato sugo, burrata and roasted garlic pesto that will leave you scraping the plate for more. 

In the entree department, the braised lamb pappardelle is a savory triumph. Hand cut Aleppo pepper pasta meets fava beans and baby carrots to bring the definition of warmth to life. On the side, coriander roasted baby carrots will add an air of lightness to your meal, coated with smoked almonds atop dollops of harissa yogurt.

Of course, there’s always room for dessert. Perhaps the classic cheesecake will incite the flavor of childhood nostalgia with its clever inclusion of rhubarb compote and malted streusel. With an endless amount of nightcap drink options, there’s a perfect complement for everyone at the table.
